We all need a little Nutty in our life right??!?

Lets just say this recipe and my life lately are both the nut in Nutty!

I’ve been very AWOL lately I know. I can’t believe May was the last time I posted a blog!  

Life has been very busy with the family, summer, Christmas, one daughter having a baby, another staring her pre-tween years and another finishing her last year of high school and applying to universities, all joyous things but just when combined with my full-time career of catering and ambassadorships it can be a bit overwhelming.

I’ve had a pretty great weekend. One of our girls is having her own baby in just 6 weeks and her shower was today. It’s been a while since I’ve been to a shower and I have to say this was a unique one! When I say “unique” I don’t mean bad I mean great. First off we held it in the pub where she and her husband first met and men were included in the festivities.

We had a plan, men on one side of the pub watching football, playing cars and eating manly munchies, with the woman on the other side with baby decorations, cupcake towers, cookie bags, girlie munchies and baby games.

Well…due to bad weather in some city where NFL was supposed to be playing the game was delayed and the men joined the girls. it ended up being a lot of fun with everyone playing the games, mingling and getting involved in what is usually a woman only event. I have to say it worked very well and made for a fantastic party with kids running around all hopped up on sugar!!

So in six weeks we’ll get to meet out new grandson and I really can hardly wait to get my hands on him!!!

So let’s get to the other nutty thing; the recipe!

I love all nuts and especially when they’re candied! You’ll notice in the recipe that I use pecans but the recipe works well with walnuts and almonds too!

Candied Pecans

Ingredients

  1. 2 Egg whites
  2. 3 tablespoons water
  3. 2 cups pecans
  4. 3/4 cup confectioners sugar
  5. kosher salt

Instructions

  1. Set oven to 325 degrees
  2. Line a cookie sheet with parchment paper
  3. Lightly beat eggs and water.
  4. Add pecans to egg mixture and toss; shaking off excess water.
  5. In a bowl or ziplock combine sugar and nuts.
  6. Place on cookie sheet and sprinkle with salt.
  7. Bake for 10-12 minutes.

Flavour options to add to sugar

  1. paprika + cayenne + garlic powder
  2. cinnamon + brown sugar
  3. curry + cayenne
  4. chilli + lime juice (add 2 tsp to egg mixture)
