Grilled Venison Burger We all love burgers right? There are so many to choose from these days…chicken, turkey, tofu, chickpea, lamb, beef, pork, venison, stuffed or a mixture of many meats! Really the list could go on forever. Our family loves burgers in all shapes and forms and frankly loves anything stuffed between two slices of bread! Recently my husband and I went to The St. Lawrence Market ( and among other items found a fabulous purveyor of wild game meat. ( One of the items I bought and couldn’t wait to use was fresh ground venison. Immediately my mind went to burgers lol. You’ll notice in the recipe I’m injecting the meat with melted butter. It may seem indulgent to you but venison is quite lean and a little butter adds a lot! Enjoy and feel free to add any toppings you’d like. People definitely have their favorites!

Grilled Venison Burger
Serves 4

  1. 20oz ground venison
  2. 2 tablespoons yellow mustard
  3. 2 tablespoons ketchup
  4. ½ teaspoon fresh thyme
  5. Good pinch of salt
  6. 2 shallots finely chopped
  7. 4 tablespoons butter melted
  8. 1 garlic clove chopped
  9. Toppings
  10. 4 oz Smoked cheddar
  11. 1 avocado sliced
  12. 8 slices of prosciutto, cooked crispy in fry pan
  13. Dijon
  14. Onions
  15. 1 tablespoon butter
  16. 2 tablespoons Balsamic vinegar
  17. 4 soft buns
  1. Mix first 6 ingredients together and form into 4 equal size patties. Melt butter and add the chopped garlic.
  2. While cooking burgers use a BBQ syringe and inject each burger with melted butter infused with garlic. Heat BBQ to medium high and grill until meat thermometer reads 165 degrees.
  3. While the burger is cooking sauté the sliced onions with the butter on medium. When almost caramelized add balsamic vinegar.
  4. Place prosciutto on bottom bun, then burger and top with cheese, sliced avocado, Dijon and onions.
