As one of my taste testers said this weekend “that was a show stopper”…and this lasagna really is!!!
I was lucky enough to have a 4 day weekend at the cottage this week! It worked out well because I had about 25 people coming for dinner on Saturday and cooked all week with a plan to use them all as guinea pigs! One of the things I made was this turkey lasagna!
Did I mention before I love ALL PASTA!!!

How lucky am I that I get two of them in this dish! Mix it with some ground organic chicken and that’s a food coma of happiness for me! I’m always very happy to make something that’s pretty quick, easy and kid friendly.
A couple of weekends ago I decided to go to the cottage. My Mom is up there and it was time to get ready and organized for ski season. Always seems to be so much to buy and plan out before each season begins. Skiing is a huge part of our family’s winter life. We hit the road to the cottage every Friday along with a lot of other Torontonians for the ski country. It makes our long winters not just bearable but truly enjoyable. The friends we have made and my children have made will last a lifetime.
I have a house full of very happy meatball eaters. Often our go-to dinner is this same recipe but with sausage also cooked alongside the meatballs in the sauce and poured over pasta. Often my problem when I make this dish is picking, picking and more picking. I absolutely force myself to freeze the leftovers right away to prevent myself from eating triple portions. One of the goals in this blog is to create some great quick meals for the family. I realize that all of you are crazy busy between work, kids, chores and maybe having a bit of a life! When you get home from work after rushing all day the last thing you want is to get into a recipe with 10 steps and a zillion obscure ingredients. This recipe can be made quickly at night and reheated or if you’re pretty quick in the kitchen it can definitely be started and eaten within an hour.
