Last weekend I was lucky enough to be invited to a girlfriends house for a fish fry! Her boys and husband had been to a local lake that week fishing and caught some of our local pickerel. It’s a very mild white fish that makes the perfect portions for a fish sandwich!

It’s a long weekend here in Canada, Victoria day weekend! So that meant something a little more special for Sunday brunch at the cottage this week. It’s going to be a short one today….I’m actually off to Boston in the morning and with only a few days in the week, it’s been crazy trying to fit everything into 3 days. I haven’t been to Boston before so I have a huge list of to do’s and to eats!! I’m not sure going in November is the wisest idea but hey…we have 5 days without kids and we’re outta here!!!

BG Fish 2 It’s Tuesday…not even the middle of the week yet, but hopefully this recipe will give you something to look forward to cooking tonight.

I have to admit it took me a lot longer than some to fall in love with fish. As a child my parents introduced me to all foods and ingredients but as much as I wanted to like fish I just couldn’t. I’m not sure if it was the taste or just the idea of it. My mom often tells the story about how I could catch a fish in the lake at the cottage, clean it and cook it happily. But wouldn’t eat it. It’s hard to even imagine now as I LOVE FISH and love how great it is for us. Like chicken, organic trout has qualities in taste and texture that you will easily notice. Do yourself a favour and seek out Blue Goose Organic or Natural Trout.
